Wild blueberry and cranberry chia pudding with mango
This dessert with vibrant colours and flavours is an easy to make, refreshing and wholesome treat. First you make a creamy and tangy pudding with chia seed. Mix the seeds with wild blueberries, cranberry juice and the natural sweetness of coconut flower sugar. Top with a smooth mango puree and garnished with dried cranberries. Perfect if you ate looking to satisfy your sweet tooth with a burst of fruity freshness!

Ingredients
- Wild blueberries – I used Canadian wild blueberries. Because I live in Holland I bought them frozen. Thaw them before use.
- Cranberry juice – I used unsweetened, pure juice.
- Chia seeds – Usually take 1 tablespoon seeds and 3 tablespoons of fluid. That can be water, fruit juice or plantbased milk.
- Coconut flower sugar – To sweeten the cranberry juice.
- Mango – Use a ripe mango that can easily mixed into puree with an (immersion) blender.
- Cranberries – dried, so they are a bit sweeter than fresh berries.

Blue/cranberry layer
- 6 tablespoons wild blueberries
- 4 tablespoons cranberry juice
- 4 tablespoons chia seeds
- 2 tablespoons coconut flower sugar
Topping
- 1 mango
- 1 handful dried cranberries
Instructions
- Mix all the ingredients for the blue/cranberry layer. Put in the fridge foor about 4 hours or overnight.
- Divide the pudding over 2 glasses.
- Puree the mango and divide on top of the pudding.
- Top with the dried cranberries.
