Watermelon icecream popsicles made from whole watermelon

Easy to make ‘popsicles’ from a fresh, whole watermelon. Just cut small wedges from the watermelon, insert a stick into the rind, freeze for 3 hours and you can enjoy fresh, whole food icecream!

  • to ¼ watermelon

Instructions

  • Cut a watermelon lengthwise into 8 strips (first halve it, then halve that half, and halve the quarter again).
  • Cut of the ends and slice 6 wedges out of the middle. With a smaller watermelon you may have to use two ⅛ slices to make 3 nice wedges out of each slice.
  • Stick a stick in the middle of the rind of each wedge.
  • Place some parchment paper in a loaf tin. Place the wedges in, separated by a small piece of parchment paper.
  • Put into the freezer for 3 hours.

Notes

If you don’t have parchment paper let the pieces touch each other and the cake pan as little as possible.
