Vegan pistachio icecream popsicles
Vegan pistachio popsicles made with wholesome nutritious ingredients: avocado, banana, lime juice and pistachio nuts. To make these popsicles extra creamy and full of texture I use pistachio paste.
Ingredients
- Pistachio – Fresh nuts and pistachio nut butter., also referred to as paste.
- Avocado – Ripe and soft. Or (storebought) pre-cut pieces from the freezer.
- Banana – Ripe and soft. Or pieces you already have frozen.
- Limons – Juice from lemons.
- Maple syrup
- Salt – I use Celtic seasalt, but take as little as possible for MM. If you use pink Himalayan be sure its the real deal and not contaminated.
Pistachio nutbutter
Pistachio paste or butter is similar to peanut butter or almond paste. You first grind the nuts into flour, and if you continue grinding, the oil is released, and you get paste. You need quite a bit of volume for this, and sometimes you can help this process along by adding some (avocado) oil. Personally, I find it quite a bit of work, and since I already make so many things myself, I often buy it.
Molds
Fot these popsicles I used large silicon molds. But you can use any you have at home. Just adjust how much filling you use.

Pistachio icecream popsicles

- small blender or immersion blender
- freezer
- 4 large popsicle molds or 6 smaller
Ingredients
- 1 avocado
- ½ banana
- 6 tbsp pistachio butter/paste
- 4 handsful pistachio's
- 4 limes
- 3 tbsp maple syrup
Optional
- ½ tsp Celtic sea salt
Instructions
- Juice the limes.
- Mix the avocado with the lime juice, the half banana, the maple syrup, the pistachio paste/butter and the salt.
- Chop the pistachios. Mix with the rest.
- Fill the molds and put in the freezer for at least 3 hours.
