Blue vegan coconut icecream popsicles – no artificial additives!

Refreshing ice cream popsicles with an amazing bright blue color. Just looking at that color will cheer you up! Or cool you down on a hot summer’s day. It will be such a hit with kids! Super easy to make. And no chemicals or unnatural additives: just coconut yoghurt (or coconut milk or coconut water) and blue spirulina. These popsicles are not only vegan, but also Medical Medium and AIP paleo friendly.

Ingredients

  • Coconut – Yoghurt, milk or water.
  • Blue spirulina – The blue version of the better known green spirulina powder.
  • Maple syrup – Only needed if you use coconut yoghurt or milk. Coconut water is sweet enough by itself. Although if you want it sweeter: I wont stop you!

Coconut yoghurt or milk

Coconut yoghurt is nice and thick, which will give you fresh and slightly creamy ice cream popsicles. Coconut milk is also an option, it makes for creamier popsicles. But of course they will contain a lot more fat at the same time.

Coconut water

If you eat as fatfree as possible, or if you avoid fermented foods, you can use coconut water. The blue colouring will sink a bit more to the bottom of your popsicles though, making the colouring spread a bit less even.

What is spirulina?

Spirulina is a type of algae that contains a lot of proteins, omega 3, minerals and vitamins. The most well known is the green spirulina. This is also on the market as a detoxifying nutritional supplement. The blue spirulina is usually not for sale as a supplement because it’s a bit more expensive than the green powder. You usually buy the blue powder in a smaller bag or jar. By the way: you only need a little bit of it to get a nice blue colour. I have had mine for almost two years before I had to get a refill.

Equipment

  • 6 small popsicle molds as shown in the image with the yellow sticks
  • 4 large popsicle molds as shown in the image with the wooden sticks
  • freezer
  • bowl
  • whisk or hand mixer
  • spoon
  • wooden skewer or back of the spoon

Ingredients
 

  • tsp blue spirulina
  • cup coconut yoghurt or coconut milk
  • 2 tbsp maple syrup
Or
  • coconut water then maple syrup is optional

Instructions

  • Mix the yoghurt (or milk or water) with the spirulina (and the maple syrup if used).
  • Divide over the molds. Spoon by spoon, stir in between to remove the air bubbles.
  • Put the popsicle sticks on top and put in the freezer for at least 3 hours.

Notes

Nutritional value calculated with yoghurt and maple syrup for 1 small popsicle.
Tip: first fill up you molds with water. Pour into a cup to check the volume. Than you can adjust the ingredients by the right volume for your molds.
