Glutenfree & AIP paleo tigernut (chufa) sugar cookies
A simple and quick recipe for glutenfree, paleo, AIP and vegan cookies made from tigernuts (chufa). This easy to make basic recipe has only three ingredients: tigernut flour, coconut blossom sugar and coconut oil. You can add some vanilla, cinnamon and a pinch of salt, to compliment all the flavors.
Ingredients
- Tigernut flour – Made from a kind of tiers on the roots of the chufa plant.
- Coconut oil
- Coconut flower sugar
- Salt – I use Celtic sea salt. If you use pink Himalayan be sure it’s pure.
Tigernut or chufa
Tigernut flour is made from ground tigernuts or chufa. They are not nuts at all, but tubers on the roots of the Cyperus esculentus. It is glutenfree, grainfree, legumefree and nutfree flour.
How do you use chufa?
Chufa tastes slightly sweet (but less sweet than banana flour or chestnut flour). The taste and structure is slightly nutty and actually quite comparable to nut flour. It is slightly drier and more fibrous than most types of grain or legume flour, so that is also quite comparable to nut flour.
Coconut oil
Take a pure oil, unrefined and ‘extra virgin’. A real coconut oil should still taste a bit like coconut, if not: it has been processed. My favorite is the coconut oil from White Pearl.
Coconut blossom sugar
Coconut blossom sugar is a natural, unrefined sugar that is extracted from the flower of the coconut palm. It is a healthier form of sugar than white granulated sugar. It is not processed and still contains minerals. Coconut blossom sugar has a low GI and hardly causes blood sugar levels to rise.

Chufa is not listed as a Medical Medium healing food. Tubers in general are not the best filler foods either, although they aren’t considered no foods. Tigernut flour can be a bit dry and fibrous. Therefor, here I combined it with coconut oil. And of course you have to be careful with fat as well. So, thesr cookies are not ideal for Medical Medium. But if you are bored with other foods I would say it’s ok for once in while.

Ingredients
- 1 cup (100 gram) tigernut flour (ground chufa)
- 1 tbsp water warm
- ¼ cup (50 g) coconut oil
- ⅓ cup (55 g) coconut flower sugar
- 1 pinch Celtic sea salt or more to taste
Instructions
- Prepare a oven tray and line it with parchment paper. Preheat the oven to 360F or 180C.
- Mix the flour, sugar and salt together.
- Add the coconut oil and a tablespoon of warm water. The warm water will soften the coconut oil a bit.
- Knead with your hands until you can make a ball. Divide the ball into small balls.
- Press the balls into cookie shapes. If necessary, you can fill the cracks with wet fingers for nice edges.
- Put the cookies in the oven for about 15 minutes. The time depends a bit on the thickness. The thicker, the longer they need. Thin cookies burn faster. They can brown a bit on the edges.
- Let the cookies cool for at least half an hour. Only then will they become hard.
