Tigernut (chufa) cookies – AIP paleo and vegan
A simple and quick recipe for glutenfree, paleo, AIP and vegan cookies made from tigernut flour (chufa). This easy to make basic recipe has only three ingredients: tiger nut flour, coconut blossom sugar and coconut oil. Some vanilla, cinnamon and a pinch of salt, which brings out the flavors well, but those are not essential.

Tiger nut flour
Tiger nut flour is a glutenfree flour. It’s made from a kind of tuber on the roots of the chufa plant. So, despite the name, tiger nuts are not nuts!
Is chufa suitable for Medical medium?
Chufa is not only glutenfree, but also grainfree, legumefree and nutfree. It is Medical Medium friendly, although it’s not in the Healing Foods book. It can be a bit dry and fibrous. Therefor, here I combine it with coconut oil, and of course you have to be careful with that for MM.
I have placed these cookies in the MM category, but that is actually right on the edge. I use 50 grams for 8 cookies so that’s quite a lot.
Is chufa suitable for AIP?
Chufa is very suitable if you are in the elimination phase of the AIP diet. It is also a nice flour to work with if you are expanding to a broader Paleo diet. To eat less sugar, you might want to adjust the amount of sugar. But not to much, or you’ll take away all the crispyness.
How do you use chufa?
Chufa tastes slightly sweet (but less sweet than banana flour or chestnut flour). The taste and structure is slightly nutty and actually quite comparable to nut flour. It is slightly drier and more fibrous than most types of grain or legume flour, so that is also quite comparable to nut flour.
Coconut oil
Take a pure oil, unrefined and ‘extra virgin’. A real coconut oil should still taste a bit like coconut, if not: it has been processed. My favorite is the coconut oil from White Pearl.
Coconut blossom sugar
Coconut blossom sugar is a natural, unrefined sugar that is extracted from the flower of the coconut palm. It is a healthier form of sugar than white granulated sugar. It is not processed and still contains minerals. Coconut blossom sugar has a low GI and hardly causes blood sugar levels to rise.
Tigernut (chufa) cookies – AIP paleo and vegan
Equipment
- oven at 360F or 180C
- oven/baking tray
- PFASfree, non-bleached parchment paper/baking sheet
- bowl
Ingredients
- 1 cup gr tigernut flour (ground chufa) (100 grams)
- 1 tbsp water warm
- ¼ cup kokosolie (50 grams)
- ⅓ cup coconut flower sugar (40 gr) verlaag met een ¼ voor minder suiker
- 1 pinch Celtic sea salt or more to taste
Instructions
- Prepare a baking tray and line it with baking paper. Preheat the oven to 180 degrees.
- Mix the flour, sugar and salt together.
- Add the coconut oil and a tablespoon of warm water. The warm water will soften the coconut oil a bit.
- Knead with your hands until you can make a ball.
- Divide the ball into small balls.
- Press the balls into cookie shapes. If necessary, you can fill the cracks with wet fingers for nice edges.
- Put the cookies in the oven for about 15 minutes. The time depends a bit on the thickness. The thicker, the longer they can be. Thin cookies burn faster. They can brown a bit on the edges.
- Let the cookies cool for at least half an hour. Only then will they become hard.
