Thai inspired cold spinach soup with steamed zucchini

Cold spinach soup with Thai flavours: ginger, garlic and chili pepper. With added steamed zucchini. This way is a great soup for the first 3 days of an original 369 cleanse of the Medical Medium protocol.

Especially on the original 369 you can have this soup during day 1 to 3 when you have a free choice of meals (within guidelines) and need to add steamed zucchini. Easy to make cold spinach soup with steamed zucchini and Thai flavours: garlic, fresh ginger, red chili pepper and lime juice.

Equipment

  • blender
  • steamer
  • garlic press
  • grater
  • large bowl for serving

Ingredients
 

  • 1 zucchini
  • 4 cups spinach preferably baby spinach
  • 3 cups water
  • 1 lime
  • 1 to 2 tbsp ginger grated
  • ¼ to ½ red chili pepper

Instructions

  • Cut the zucchini into bite size pieces.
  • Steam for 5 minutes. Let cool.
  • Press the garlic, grate the ginger and cut the pepper into small pieces.
  • Blend the garlic, ginger and red pepper with the water. Add the spinach hand by hand.
  • Poor into a large bowl and add the zucchini.
