Fatfree sweet potato spinach soup with chanterelles and dried tomatoes
On the Medical Medium diet I like to mix and match between the recipes on the Medical Medium official website. This cold spinach soup is one of those: created with the spinach cleanse soup in mind, but just a bit different. The base is formed by steamed and cooled sweet potatoes, blended with spinach and red bell pepper. I added in some honey for extra depth and sweetness. The topping is made with dried chanterelles and tomatoes. Both soaked, and then the chanterelles are steamed briefly.

Ingredients
- Sweet potato – You need to make about one cup of puree, one average potato should do the trick.
- Spinach – Grab two large handfuls, probably about three cups. Basically, together with the water, bell pepper and potatoes you can fill up a blender.
- Red bell pepper – Cut into bitesize pieces to make the blend a bit smoother.
- Honey – Stir in after blending.
- Chanterelles – I buy those dried, let them soak and then steam them briefly.
- Dried tomatoes – Make sure your tomatoes are unsulfured. If possible choose without salt. For as lowfat as possible choose ‘dry’ dried tomatoes and preferably not in a jar with oil (but if not possible: rinse off the oil before use). Also make sure it has no other additives.
- Thyme & oregano – Both dried or fresh in the soup, but when used as topping I like to use some fres twigs.

Sweet potato spinach soup with dried tomatoes and chanterelles

- 1 large hand chanterelles, dried
- 1 large hand dried tomatoes
- oregano, fresh
- thyme, fresh
Instructions
- About 10 minutes before you start: soak the chanterelles in warm water.
- Then peel the sweet potato, cut into cubes and steam for about 15 minutes. Halfway add in the chanterelles (on the side, keep potatoes and chanterelles separated). Let cool. Do not throw away the soaking water.
- If you use dry tomatoes, soak them for about 10 minutes. If all you could find is tomatoes in oil then rinse them off and set aside in a sieve.
- Wash and cut the bell pepper. Blend it with 2 cups of the soaking water of the chanterelles + as much of the steaming liquid as needed. Also add the (dried) thyme and oregano.
- Add in the sweet potatoes and spinach.
- When blended, stir in the honey.
- Poor into a bowl and top with the tomatoes, chanterelles and some fresh oregano and thyme.
