Smoothiebowl with spinach, banana, tigernuts, honey and wakame seaweed flakes

During my Medical Medium challenge I came up with the sweet and comforting bowl. It has no grains, nuts or seeds. And as all my recipes, it’s gluten, dairy, egg and soyfree as well. So, even on an AIP paleo diet or following the Medical Medium lifestyle you can enjoy this bowl!

Tigernut flour or chufa

Tiger nuts, although the name suggests otherwise, aren’t nuts at all. They are little, and a bit chunky balls on the roots of the chufa plant. So a tigernut, or chufa, is a tuber.

Wakama

I used dried wakame seaweed flakes. That gives a crispy bite that I like very much. But if you don’t, you can grind them into powder and mix it up with the rest of the ingredients.

Seaweed has a very high nutritional value. Eating seaweed regularly can ensure that you don’t develop deficiencies, even with a restricted dietary menu. It is usually recommended to eat a maximum of 5 grams of seaweed at a time, about three times a week. This concerns dried seaweed. When soaked, dried seaweed increases in volume approximately 10 fold. So 5 grams of dried weed equals 50 grams of soaked (or fresh) seaweed. By the way, 5 grams is quite a lot: in recipes, 1 or 2 grams of dried seaweed is often enough. When pregnant or if you have Hashimoto’s or Graves usually lower quantities are advised.

I did not see those warnings in the MM books, but I did not read the thyroid book yet. So I cannot give you any advice. But I do know that seaweed (dulse, not wakame) is part of the Heavy Metal Detox smoothie.

Ingredients
 

  • 2 bananas
  • 1 handful spinach
  • 4 tablespoon tigernut flour (ground chufa)
  • 1 tablespoon lemon juice
  • 1 tablespoon raw honey
  • ½ tablespoon wakame seaweed flakes
  • 8 oz water up to, maybe less

Instructions

  • Mix the banana with the spinach, lemon juice and half of the water.
  • Spoon in the flour and stir well. See if you need t add more water.
  • Spoon in the honey and mix.
  • Sprinkle the seaweed flakes on top.
  • Garnish with some banana slices if you like.
