Shaved ice from frozen nectarine with coconut yoghurt, roasted almonds and honey
Lovely, sweet and refreshing dessert. You can make this fruity shaved ice by simply putting a nectarine in the freezer. The next day it will be hard and you can grate it. This is how you can easily make healthy shaved ice.
Ingredients
- Coconut yoghurt
- Nectarines – Frozen whole, grated just before serving.
- Honey – Raw.
- Almonds – Slivered/ shaved and roasted. Can be replaced by tigernuts (aren’t nuts).
What kind of yoghurt?
You can have it with a bowl of coconut yogurt for Paleo and AIP. For Medical Medium yoghurt is a food to avoid, but only on level 4. So, if you choose to eat it, coconut yoghurt is best as well. If available you can venture out to oat yoghurt. I used coconut myself.
Nuts or tigernuts
I had some roasted almonds and honey as topping. For AIP use tiger nut shavings instead of almonds. Buy whole and cut them with a large and sharp knife.

Yes and no. Usually yoghurt is avoided because it is fermented. But its only on level 4. So if you venture out a bit coconut yoghurt is usually best.

Ingredients
- 1 serving coconut yoghurt
- 1 or 2 nectarines
- 1 tbsp raw honey
- 1 tbsp slivered/ shaved almonds
For AIP and free of nuts
- 1 tbsp shaved tigernuts (chufa)
Instructions
- Place a nectarine in the freezer overnight.
- Place a bowl in the freezer or refrigerator to let it cool.
- Roast the almonds or tiger shavings in the pan and let cool. If you want to eat as raw as possible skip this step.
- Spoon the yoghurt into the cold bowl. Shave the nectarine over it. Top with the almonds (or tiger shavings) and honey. Eat right away, the nectarine shavings will melt quicly.
