Raw vegan & Medical Medium spinach soup with samphire, cress, ginger and garlic
Easy to make raw soup from spinach with just water and lime juice of half a lemon. Topped with samphire and cress. And a little kick from garlic and freshly grated ginger. Perfect for anyone following the Medical Medium protocol.

Spinach
An authentic gazpacho has no spinach. But since I started following the Medical Medium diet I eat a lot of salads with spinach and raw spinach soup. And this way you get a salty kick from the samphire.
Leafy greens
Leafy greens like spinach are an essential part of the Medical Medium diet. To quote: “if you’re not getting enough leafy greens, the future of your health is in jeopardy” (Medical Medium website).
Ingredients
- Spinach – fresh, preferably bio.
- Lime – or half a lemon.
- Garlic
- Gember – piece, freshly grated.
- Cress – or other sprouts.
- Samphire – coastal vegetable with crispy salty taste, just rinse and eat raw.
Optional
- Cashew nuts – then this soup will no.linger be fatfree.
- Sesame oil – then no longer free from seeds, fat and oils
- Coconut aminos – then no longer free from ferment
- Sprouts – add any sprouts yopu have (inead of cress, or both)

Ingredients
Soup
- 3 handsful spinach
- 1 lime
- or ½ lemon
- 1 clove garlic
- 1 tablespoon fresh ginger
- 1 cup water
Topping
- 1 small handful cress or other sprouts or both half/half
- 1 handful samphire
Optional
- ½ handful cashew nuts no longer fatfree and free from nuts
- 1 tablespoon coconut aminos no long free from ferment
- 1 tablespoon sesame oil no longer free from seeds and oils
- sprouts other than cress
Instructions
- Press the garlic, grate the ginger.
- Blend the spinach with the garlic, ginger, lime juice and water.
- Poor into a bowl and top with the samphire and cress.
- Optional to blend in the cashews.
- Optional to top with some extra it's and drips of coconut aminos and sesame oil.
