Raw vegan & Medical Medium spinach gazpacho with green asparagus

Easy to make raw soup from spinach with tomatoes, cucumber, garlic, basil and lime juice. With chopped up raw green asparagus for a nice crunch. Perfect for anyone eating raw vegan or following the Medical Medium protocol.

What is gazpacho?

Gazpacho is a cold Spanish soup made from tomatoes, cucumbers and garlic. Often mixed with other vegetables like bell pepper. For an authentic gazpacho you also add stale bread and olive oil. I left those out to make the gazpacho completely raw vegan and ok for a fatfree Medical Medium diet.

Spinach

An authentic gazpacho has no spinach. But since I started following the Medical Medium diet I eat a lot of salads with spinach and raw spinach soup. And this is my favorite way to make a cold soup, because you use healing asparagus raw as well.

Leafy greens

Leafy greens like spinach are an essential part of the Medical Medium diet. To quote: “if you’re not getting enough leafy greens, the future of your health is in jeopardy” (Medical Medium website).

Asparagus

For Medical Medium asparagus are high on the list of healing foods. They are even called miracle foods.

Ingredients

  • Spinach – 2 cups: fresh, preferably bio.
  • Asparagus – 8 pieces, used raw. Chopped in bitesize pieces Save the heads for garnish.
  • Tomatoes – 1 cup chopped: cherry or regular, some extra for garnish.
  • Cucumber – 1 cup cubed, is about one third of a whole cucumber.
  • Lime – or half a lemon.
  • Garlic – I used two cloves.
  • Basil – about 4 to 6 leaves used as garnish.

Is this soup raw vegan?

Yes, you blend all the raw vegetables together and stir in chopped raw asparagus.

Is this soup Medical Medium?

Yes, it is perfect for Medical Medium because it combines healing foods like spinach, asparagus, tomatoes, cucumber and garlic. And you don’t need to add any filler foods or fat and oils.

Is this soup AIP paleo?

No, tomatoes are nightshades. On a paleo diet some people sometimes do eat nightshades. But in the elimination phase of AIP they should be avoided.

Nice cold soup that can be ready within minutes. Just blend the spinach with tomatoes, cucumber, garlic, and lime juice. Then sir in chopped green asparagus and garnish with with basil.

Ingredients
 

Soup
  • 2 cups spinach
  • 1 cup tomatoes
  • 1 cup cucumber
  • ¾ cup water
  • 1 lime
  • or ½ lemon
  • 1 clove garlic
  • 6 leaves basil

Instructions

  • Press the garlic, chop the tomatoes and cucumber. If you have cherry tomatoes use some extra for garnish (cut in half).
  • Blend the spinach with the garlic, tomatoes, cucumber, lime juice and water.
  • Wash the asparagus and chop in bitesize pieces. Stir in, but save the heads for garnish.
  • Poor into a bowl and top with the asparagus heads, cut cherry tomatoes and basil.
