Radish salad with sprouts, lemon, dill and honey dressing

Lovely fresh and sweet salad. Perfect as a side dish at a BBQ or lunch buffet. The main ingredient are thin sliced radishes. Combined with different kinds of sprouts, fresh dill and some lime zest. With a freshly sweet dressing of lemon juice and raw honey. For vegan you can replace the honey with maple syrup.

Ingredients

  • Radishes – About 12 pieces.
  • Sprouts – Any young, tender shoots, for example alfalfa, broccoli or radish.
  • Lemon – For zestig and juicing. So use organic.
  • Dill – Fresh.
  • Honey – Can be replaced by maple syrup for vegan.

Equipment

  • zester or grater
  • sharp knife or mandolin

Ingredients
 

  • 1 big bunch radishes or 2 smaller (about 12 radishes)
  • 4 handsful sprouts
  • 1 lemon
  • 1 handful fresh dill
  • 3 tbsp raw honey
  • or maple syrup for vegan
For AIP
  • ONLY sprouts not derived from seeds, nuts, grains or legumes

Instructions

  • Wash the radishes and cut into thin slices. You can also use mandolin.
  • Wash and grate the zest of the lemon. Squeeze 2 tablespoons of juice.
  • Add 2 tablespoons of honey (or maple syrup) to the juice and marinate the radish for 10 minutes.
  • Add the sprouts and the zest. Add an extra, fresh tablespoon of honey.
  • Top with sprigs of dill.

Notes

Be careful with slicing radishes with a mandoline. I personally prefer a knife.
