Potato salad with spring onion, radishes and orange honey dressing

Just a simple potato salad I whipped up with some leftover steamed potatoes with the skin on. A bit spicy with chili flakes, radishes and spring onions. And bit sweet with an orange honey dressing. Just like sweet chili sauce, but healthy.

Equipment

  • steamer I use a basket in a cooking pan
  • little bowl + whisk
  • knife

Ingredients

  • cups potatoes
  • 8 radishes
  • 2 or 3 green or spring onion
  • 1 tbsp chili flakes
  • ½ orange
  • 2 tbsp raw honey
  • 2 pinches Celtic sea salt or to taste

Instructions

  • Wash the potatoes thouroughly and remove bad parts. Cut into pieces. Leave the skin on.
  • Steam the potatoes and let cool down. You can even put them overnight un the fridge.
  • Wash and cut the radishes and spring onions. Mix with the potatoes.
  • Mix the chili flakes with the juice of the half orange and the honey. Mix with the potatoes.
