Potato salad with spring onion, radishes and sweet chili orange honey dressing

Basic and simple potato salad with leftover steamed potatoes, with the skin on. A bit spicy l: with chili flakes, radishes and spring onions. And a bit sweet: with an orange honey dressing. Just like sweet chili sauce, but with unprocessed whole foods.

Ingredients

  • Potatoes – I had potatoes in their skin, from the day before.
  • Radishes
  • Scallion
  • Chili flakes – Or a red chili pepper.
  • Orange – Juice from half an orange, but a whole one is also fine.
  • Raw honey – I used 2 tablespoons.
  • Salt – I use Celtic sea salt. Himalayan salt is also possible, but make sure you have a pure variant (there are polluted types on the market). To taste, but for MM as little as possible.

Instructions

  • Wash the potatoes thouroughly and remove bad parts. Cut into pieces. Leave the skin on.
  • Steam the potatoes and let them cool down.
  • Wash and cut the radishes and spring onions. Mix with the potatoes.
  • Mix the chili flakes with the juice of the half orange and the honey. Mix with the potatoes.

Notes

You can also keep cooked or steamed potatoes overnight in the fridge to use the next day.
