Potato salad with arugula and a fatfree cilantro dressing

Easy to make basic potato salad with a fatfree dressing made from lemon, honey or maple syrup and cilantro. If you hate cilantro, which I can’t imagine (I love it!), you can use parsley. Mix with arugula, tomatoes and cucumber.

Ingredients

  • Potatoes – peeled and in cubes (4 cups or 600 grams)
  • Leafy greens – I had 2½ cups arugula (75 grams), but you can also take spinach, lettuce, watercress or Swiss chard.
  • Tomatoes – I had cherry, but regular will do just fine.
  • Cucumber – I had mini but regular will do just fine.
  • Cilantro – I took one small bunch of fresh cilantro.
  • Garlic – One large or two smaller cloves for the dressing.
  • Lemon – Two, to juice for the dressing.
  • Honey or maple syrup (for vegan)

  • 1 cup cucumber
Dressing

Instructions

  • Steam the potatoes. In cubes. Let them cool.
  • Juice the lemons. Press the garlic. Blend the lemon juice with the honey or maple syrup, garlic and cilantro.
  • Mix the dressing with the potatoes.
  • Mix in the arugula. Cut the tomatoes and cucumber and mix in as well.
