Vegan & fatfree creamy one pot with white beans, spinach and cherry tomatoes

Easy and quick to make dish with pre-cooked or canned white beans. The sauce is fatfree but creamy, made with some pureed white beans and a bit of tomato passata. Just add spices, spinach and cherry tomatoes. And your dinner will be served in under 10 minutes!

Ingredients

  • White beans – Pre-cooked or canned. Two cups left whole and a half cup to make the such ‘creamy’.
  • Broth – Medical Medium healing broth, or regular vegetable broth. Water will do fine as well.
  • Spinach – Three large handfuls of regular or baby spinach.
  • Tomatoes – I used small sweet tomatoes like cherry tomatoes. Cut in half and not really cooked, but just warmed up a bit in the sauce.
  • Onion – I used a yellow onion, but a red onion or shallots will do just fine.
  • Garlic
  • Spices – Paprika powder, coriander, cinnamon, cumin (all ground).
  • Tomato passata – You can use puree as well, just use one or two tablespoons and add in two tablespoons of water (extra) when you stir it into the onions.

Quick and easy to make one pot that is vegan and fatfree. Made with pre-cooked or canned white beans its ready in under 10 minutes. The sauce is made creamy by blending some white beans with broth. Tomato passata adds depth in the flavours. Add in some spices, spinach and tomatoes… and dinner is served.

Instructions

  • Chop the onion finely and bake with just a little bit of water.
  • Press the garlic and add.
  • Add the tomato passata and the spices.
  • Add two cups of beans. Take the other half cup beans and mix withe the broth (or water). Add.
  • Add the spinach bit by bit (let it shrink before you add the next).
  • Cut the tomatoes in half and add, they just have to warm up a bit.
