Glutenfree, fatfree & vegan oatmeal cookies with dates: just 2 ingredients!

Easy to make breakfast cookies with just 2 ingredients: oatmeal and Medjoul dates. These cookies are soft and chewy with a slight crisp on the outside. They are glutenfree and vegan. And even fatfree, so perfect for the Medical Medium protocol.

Ingredients

  • Oatmeal – I used glutenfree old fashioned rolled oats. If you don’t have those, you can use cut oats instead. But with those, you will loose a little bit of crisp, because you put them in a kitchenaid, together with the dates, and that will make the flakes a bit smaller.
  • Dates – When I make these cookies, I usually need six or seven Medjoul dates. Measured in half a cup. Medjoul dates are big and soft, it’s better not to use small and dry dates. If you have dry dates you may have to soak them first.

FAQ

Are these cookies vegan?

Yes.

Are these cookies Medical Medium?

Yes, they are especially designed for the Medical Medium protocol. They are not only vegan, but gluten and fatfree as well. Although oats are a filler (and not healing) they are a preferred grain. Therefor you can even have these cookies for breakfast, after your morning cleanse. Oats are also ok on the first 3 days of a 369 original cleanse.

Oats contain fat, why is this recipe labelled fatfree?

Oats are not completely fatfree: 100 grams contain about 6,5 to 7 grams of fat. That means half a cup contains about 3 grams of fat. Still this is not overt or radical fat, so for the Medical Medium protocol they are considered fatfree.

Are oats glutenfree?

Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they can be cross contaminated. Always check the labels to see if they are guaranteed glutenfree.

Are oats contaminated with glyphosate?

A study into breakfast cereals with oatmeal, found glyphosate in Cheerio’s packs, among other things. Most likely from pesticides (Roundup from Monsanto). By now, at least in Holland where I live, everyone is convinced that this is carcinogenic. And it is linked to Parkinson’s. Unfortunately, it has not yet been banned. So for oats it seems especially important to buy organic oatmeal without other additives.

Are these cookies AIP paleo?

No, oats are grains.

Do you have to soak the dates?

No, if you use Medjoul dates they are soft en moist enough. Only if you have small, dry dates you might have to soak them first. But please only use those if you can’t get your hands on the much tastier Medjoul dates.

Instructions

  • Preheat the oven to 360F or 180C. Prepare a baking sheet with parchment paper.
  • Mix the oatmeal with the dates in a small kitchenaid. I use the one that comes with my immersion blender.
  • Make 4 balls. The dough is slightly sticky, but just right to handle.
  • Place the balls on your baking sheet and press them into the desired shape. They will not spread anymore.
  • Put them into the oven. Set the timer for 15 minutes.

If I have the cookies for breakfast I make 4 for 1 serving.
