Oatmeal cookies with banana and almond butter – Glutenfree and vegan
Easy to make, slightly crispy cookies made from just cut oatmeal, bananas and almond butter. To make it more special for a cozy autumn or winter treat, you can add pumpkin spice and vanilla.

Medical Medium
The cookies are Medical Medium proof. But because of the almond paste they do contain some fat. So, if you follow the protocol by not eating fat before 4 pm, it would be better not to have these cookies for breakfast.
Are oats glutenfree?
Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they con be cross contaminated. Always check the labels to see if they are guaranteed glutenfree.
Glyphosate in oats?
A study into breakfast cereals with oatmeal, found glyphosate in Cheerio’s packs, among other things. This can come from a pesticide (Roundup from Monsanto). By now, in Holland everyone is convinced that this is carcinogenic. And it is linked to Parkinson’s. Unfortunately, it has not yet been banned. So for oats it seems especially important to buy organic oatmeal without other additives.
Are oats good for you?
Yes, certainly. Because oats contain essential proteins, good minerals such as magnesium and insoluble fibres that are very beneficial for your microbiome. Oats digest very slowly and also release glucose slowly into your blood.
Oat flakes or oatmeal
I used cut oat flakes. These are flat rolled oat grains that have been cut in smaller pieces. Uncut rolled oats,are a bit to robust for the cookies.

Ingredients
- 1 cup old fashioned rolled oats
- or cup oatmeal, cut or quick oats
- 1 banana
- 2 tbsp almond butter
- 2 pinches Celtic sea salt or to taste
- ½ tsp pumpkin spice or cinnamon
- ½ tl Bourbon vanilla powder or extract
Instructions
- Preheat the oven to 390 F. Prepare a baking sheet with baking paper.
- If you use old-fashioned oats: grind them shortly into 'cut' oats.
- Mash the banana and mix all the ingredients through it.
- Make 6 balls (with a spoon or by hand). The dough is slightly sticky, but just right to handle. If it is too sticky, you can add some oatmeal. Bananas can vary in size.
- Place the balls on your baking sheet and press them into the desired shape. They will not spread anymore.
- Set the timer for 20 minutes, but keep an eye on them from about 16 minutes. Every oven is a little different. In my oven, they become crispy on the edges after 20 minutes.
