Oatmeal breakfast cookies with banana, pecans almond butter and dried cranberries
Easy and quick to make breakfast cookies with oatmeal and banana. Combined with a little almond paste, pecan nuts and dried cranberries. The pecan nuts make the cookies nice and crispy, but you could also replace them with other nuts. You can replace the dried cranberries with raisins or goji berries.
These cookies are similar to the cookies made of cut oatmeal, banana and almond paste. Those are slightly smaller, less robust, with cinnamon and without nuts and dried fruit.
Medical Medium
The cookies are Medical Medium proof. But because of the almond paste they contain some fat. It’s therefore better not to have these cookies for breakfast.
Are oats glutenfree?
Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So be sure to buy oats wich ate guaranteed glutenfree.
Glyphosate in oats?
A study into breakfast cereals with oatmeal found glyphosate in Cheerio’s packs, among other things. This is a pesticide (Roundup from Monsanto). By now, in Holland everyone is convinced that it is carcinogenic. And it is linked to Parkinson’s. Unfortunately, it has not yet been banned. So fot oats it seems especially important to buy organic oatmeal without other additives.
Are oats good for you?
Yes, certainly. Because oats contain essential proteins, good minerals such as magnesium and insoluble fibres that are very beneficial for your microbiome. Oats digest very slowly and also release glucose slowly into your blood.
Oat flakes or oatmeal
I used coarse oat flakes. These are flat rolled oat grains that have not been cut afterwards. Coarse oat flakes are very tasty for these somewhat coarser, robust cookies. If you do not have coarse flakes, you can also use fine oatmeal (cut flakes).

Ingredients
- ½ cup old fashioned rolled oats uncut
- 1 banana
- ½ cup pecan
- 2 tbsp dried cranberries or other dried fruits
- 1 tbsp almond butter
- Celtic sea salt to taste
Instructions
- Preheat the oven to 360F. Prepare a baking tray with baking paper.
- Mortar the pecan nuts into small chunks. This can also be done by chopping with a knife or crumbling them by hand.
- Mash the banana in a bowl and mix in all the ingredients.
- Divide into four. Place the baking ring on the baking paper and scoop a heap into the baking ring. Press firmly. I find it more convenient to do this by hand, but you can also use a fork.
- Put in the oven for 15 minutes.
- Turn the cookies over. Give 5 to 10 minutes more in the oven.
- Preferably let them cool on a rack.
