Glutenfree & vegan oat sugar cookies
Easy to make sugar cookies with just 3 ingredients: oat flour, coconut flower sugar and coconut oil. These cookies are sweet and firm, but also just a little bit crumbly and crispy. They are glutenfree and vegan.

Ingredients
- Oat flour – Make sure it’s glutenfree.
- Coconut flower sugar – Dark, unrefined sugar made from the juice of coconut blossom.
- Coconut oil – Be sure to use unrefined, pure coconut oil. This will smell and taste a bit like coconut.

Yes.

Yes. Although oats are a filler (and not healing) they are a preferred grain. But these cookies are absolutely not fatfree because of the coconut oil. So don’t eat them on a cleanse or for breakfast.

Equipment
- oven at 360F or 180C
- glass bowl
- fork
Ingredients
- 1 cup (120 g) gf oat flour
- ½ cup (60 g) coconut flower sugar
- 2½ to 3 tbsp coconut oil
Instructions
- Preheat the oven to 360F or 180C. Prepare a baking sheet with parchment paper.
- Melt the coconut oil in your bowl.
- Mix the oat flour and coconut sugar in with a fork.
- When it dries up a bit you can knead by hand. You have to be able to get all the crumbs into one ball. If 2½ tablespoons of coconut oil turns out not to be enough add a ½ extra. More than 3 will be too greasy for sure.
- Make 6 balls. The dough is not sticky, but should be just right to handle.
- Place the balls on your baking sheet and press them into the desired shape. They will spread only just a little bit..
- Put them into the oven. Set the timer for 10 minutes, they might take 11 (that depends a bit on your oven).
- When you take them out, first let them cool a bit to get firmer.

The cookies keep up to 3 days in a container.
