Glutenfree & vegan no-chocolate sweet potato waffles with no-chocolate sauce
Who said you could never eat chocolate waffles with chocolate sauce again!? Serve this to your guests and they might not even recognize them as gluten, grain, egg, dairy, fat and cocoa free…. Ssst, I won’t tell them either! The batter is made from carob, sweet potato, cassava flour and tapioca. The sauce is made with just maple syrup en carob.
Medical Medium & AIP paleo
These waffles tick a lot of boxes where it comes to allergies, intolerances and special diets in general. Vegan (egg and dairyfree), gluten, cocoa and no radical fat: so they are perfect for Medical Medium. Again no eggs, no dairy, no cocoa, but also no grains, no.legumes, no seeds and no nuts: so very AIP paleo friendly as well.

Ingredients
- Sweet potato – Roasted, steamed or cooked and then mashed.
- Carob – Used for both the waffles and the sauce.
- Cassava flour – Whole ground cassave. If not tolerated replace with tigernut flour.
- Tapioca – Starch from the cassava root. If not tolerated replace with arrowroot.
- Coconut flower sugar – To sweeten and crisp up the waffles.
- Maple syrup – Base for the no-chocolatesauce.
- Baking powder – Optional for just a bit of extra fluf. Preferably corn and aluminium free.
Carob
The key element to create this no-chocolate waffles is carob. Carob powder is made from the pods of the carob or locust bean tree (Ceratonia siliqua). It tastes a lot like chocolate.
Carob and Medical Medium
Carob doesn’t contain any caffeine, like cocoa does. Carob is not a healing food, but it’s a filler and definitely no no-food!
Carob and AIP paleo
Carob is not made from the beans or seeds inside of the pot of the locust bean tree, but the pot itself: the shell. So it contains no legumes or seeds.

No-chocolate sweet potato waffles with no-chocolate sauce

Ingredients
- ½ cup sweet potato pre-roasted or cooked and mashed, measured tightly packed
- ⅛ cup carob
- ⅛ cup cassava flour
- ⅛ cup tapioca
- ¼ cup coconut flower sugar
Optional for MM
Optional for AIP
- 1½ tbsp cream of tartar
- + ½ tbsp baking soda
Chocolate sauce
- ⅛ cup maple syrup
- 1 tsp carob best added by ¼ tsp at a time
Instructions
- Warm up your waffle iron.
- Mix the cassava, tapioca, carob and sugar.
- Mash in the sweet potato with a fork, until you can form a very thick batter, almost a dough.
- Make two batter/dough balls. I used a spoon. Scoop them into your iron.
- Cook for 8 minutes (or 9 to 10 for a bit crispier).
- In the meantime whisk in the carob to a small bowl of maple syrup. It's best to do that with a small dose at the time.
- Serve the waffles on a plate and drizzle the sauce on top.
