Ingredients

  • Black beans – For stews I use dried that need to be soaked and cooked. But for salads I use canned, easy and quick.
  • Mango – Ripe!
  • Tomatoes – Regular or cherry tomatoes
  • Red onion – Chopped very fine
  • Garlic – Pressed as fine as possible.
  • Limes – Juice for the dressing
  • Chili flakes
  • Paprika powder
  • Maple syrup
  • Avocado oil – Optional

  • 1 tbsp avocado oil

Instructions

  • Chop the tomatoes and the mango. Chop the onion very fine and mix with the beans.
  • Press the garlic. Mix the juice of a lemon, the maple syrup and (if you use it) the avocado oil. Mix in the paprika powder and chili flakes. Mix through the salad.
  • Chop or tear the cilantro and mix.
