Medical Medium salad dressings part 1: citrus basics
Basic Medical Medium dressings with citrus fruits. All these dressings are oil, fat and ferment free and great for inspiration to create your one favorite dressings.Quick and easy to make. With juice from lemon, lime, orange and grapefruit. Some fresh green herbs and honey or maple syrup. For some extra kick add spices, garlic and chili peppers (or flakes). I use honey frequently, for vegan substitute honey with maple syrup.
Only citrus fruits?
Yes, for now, but this is just part 1. There will be more to follow. I’m working on an overview of dressings

Ingredients
- Lemon, lime, orange and grapefruit – just squeeze the juice out and don’t forget to withhold the seeds. One lemon is about the same as two limes, half an orange or a little less than half a grapefruit.
- Soft green herbs – parsley + chives, cilantro, mint, basil, dill, chervil. These are all great just to chop up or cut and mix with your veggies. Or you blend them with your dressing.
- More ‘woody’ green herbs – thyme, sage, oregano, rosemary. Those need some ore attention: best to use just the leaves and some softer sprigs. Mix into the dressing or sprinkle on top.
- Garlic – used raw and pressed so you will need just a clove, maybe two, for two servings.
- Chili – I always use flakes, I’m in the kitchen often so I ‘allow’ myself to be a bit lazy. But you can always use fresh. When served with the seeds chillis are extra hot. Just a half teaspoon per two servings can give some kick. If you can handle it do some more. For a dressing I personally would not go for the hotter stuff like madame Jeanette.
- Spices -fennel seeds go very well with orange. For a bolder taste I often use cumin and coriander seeds. Those spices are common in both the Mexican and Middle Eastern cuisines. Preferably buy them while and grind them fresh. I use an electric coffeegrinder.
- Honey and maple syrup – where would we be without! Honey is best kept raw, so it’s perfect for dressings. Maple syrup give a bit more depth to your dressing.
Quick and easy
The easiest way to make a Medical Medium dressing is just with some lemon or orange juice. Even on the road: just take an orange with you, cut it open and squeeze! Even when you eat at a friends house or a restaurant you can take it with you to make sure you won’t get any accidental seed oil in your salad!

With one lemon, two limes or half an orange you have the base for one larger or two smaller portions. Add in one large hand of leafy herbs and one or two spoonfuls of honey or maple syrup.
No. When used with potatoes or grains (they suck up a lot of fluids) double the ingredients.
No, not all. I use honey frequently, for vegan substitute honey with maple syrup.
No, not all. For some I use chili peppers which are nightshade that you can’t have when you follow a strict paleo diet. But actually a lot of paleo followers do eat chili peppers occasionally. For the elimination phase of AIP you will have to leave them out, as you have to with the fennel, cumin and coriander seeds.

Fresh
- 1 lemon

Sweet
- ½ orange
- 1 to 2 tablespoons raw honey

- ½ to 1 chili flakes or ½ fresh pepper

- 1 lemon
- ½ handful thyme, oregano, rosemary and/or sage
- 1 to 2 tablespoons raw honey

Soft & sweet Mediterranean
- ½ orange
- 1 handful basil
- or dill
- 1 to 2 tablespoons raw honey
- 1 to 2 cloves garlic
- ½ to 2 teaspoons fennel seed preferably freshly ground
Fresh & sweet Mexican/Thai
- 2 limes
- 1 hanfldful cilantro
- or mint
- 1 to 2 tablespoons raw honey
- 1 to 2 cloves garlic
- 1 to 1½ teaspoons chiliflakes
Strong Middel Eastern
- ½ to 1 orange
- ¼ handful thyme, oregano, rosemary or sage
- 1 to 2 tablespoons maple syrup
- 1 clove garlic
- ½ to 1 teaspoon chili flakes
- ½ teaspoon coriander seeds preferably freshly ground
- ¼ tsp cumin seeds preferably freshly ground
Tangy & sweet
- ½ grapefruit
- 1 handful tarragon
- 1 to 2 tablespoons maple syrup
Instructions
- Juice the fruit. Make sure you separate the seeds.
- Add the honey or maple syrup. Whisk.
- Press the garlic, cut the herbs, grind the seeds. Whisk or blend.
