Medical Medium oat waffles with just 1 ingredient

This is by far the easiest and quickest way to make yourself a healthy and warm breakfast on busy mornings. The basis of the recipe is just plain oat flour. Storebought flour, or you can grind any kind of rolled oats yourself (old fashioned or cut/quick oats, not steel cut). Of course you have to combine it with some water to make a thick batter. All the other ingredients are optional and I will explain what adding those will do to enhance the flavour and texture of your waffles.

Fatfree baking

If you follow the Medical Medium protocol its important to eat as low fat as possible. Especially in the morning your meals should be fatfree. I used to think it was be impossible to bake waffles without adding any oil. But thanks to other MM followers I learned that it ís possible, if you use a non-stick ceramic waffle iron.

Non-stick ceramic waffle maker

I got the Breville DuraCeramic Waffle Maker for Christmas. It’s a bit expensive so that was great gift! It is ceramic non-stick and it makes two large waffles Belgian waffles. It’s very compact and easy to bake with even without any oil. I bought it in the Netherlands. Unfortunately I couldn’t find it on the American Amazon, but Medical Medium suggests this heart shaped waffle maker (Euro Cuisine WM520).

Main ingredients

The main ingredient for these waffles is oat flour. You don’t have to use (plantbased) milk of any kind. Water will do just fine. After all, oat milk is just blended oats with water, so why not just use a little extra oat and skip the whole ‘oat milk make’ step. You don’t need to use eggs either, nor any kind of replacement. The oats will get sticky when combined with the water and have more than enough binding on their own.

  • Oat flour – I used to make the waffles with 1 cup oat flour. That makes thick waffles. Recently I tend to make them a bit thinner, with ¾ cups. They get a bit crispier that way. Use store bought flour or grind any kind of rolled oats into flour yourself.
  • Water – For 1 cup flour use ⅔ cups.of water. For ¾ cups flour use ½ cups of water.

Is oatmeal fat-free?

Oatmeal is not a healing food, but on top of the list of filler foods. I still has some fat in them, but no overt fats and for Medical Medium they are considered low fat and ok for breakfast. You can even have them in the first 3 days of 369.

Are oats glutenfree?

Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they can be cross contaminated. Always check the labels to see if they are guaranteed glutenfree. If it doesn’t say so, they are not.

Optional ingredients

All optional ingredients will improve either the flavour or the texture of you waffles. But even the optional ingredients are quite basic. And the recipe will still be quick and easy to make. So just choose the options that suit your diet best or what you have on stock.

  • Baking powder – Baking powder forms bubbles when it’s warming up. So it will make your waffles fluffier, they will also become just a bit bigger. Just be sure it’s corn and aluminum free. Don’t use baking soda: that will need some kind of acidic addition (like lemon juice) to form bubbles.
  • Coconut flower sugar – For a sweet and deeper taste. It also makes your waffles crispier. It will turn them a bit darker as well.
  • Cinnamon and vanilla – Use a pod, real Bourbon powder or extract. Do not aroma, wich is just a chemical flavour, or sugar with vanilla taste.
  • Celtic sea salt – Normally I would use about 2 pinches or more to taste, but on the MM protocol try to keep your salt intake as low as possible.

Instructions

  • Mix the flour with the baking powder, sugar and spices (if you use them).
  • Mix in the water until it forms a thick batter. Set aside to let it go thicken a bit.
  • Warm up your waffle maker.
  • Add in the batter. Half of the batter will form one large waffle, so you can make two with this recipe.
  • Close the lid, you can push it down gently but don't put a lot of pressure on it. There has to be a slight opening to let the steam out and give the batter a change to rise.
  • After 7 minutes you can take your waffles out. Use a small wooden spatula to loosen them if necessary.
  • Serve with your favourite toppings.
