Medical Medium ‘mayonaise’ dressing made from chickpeas, aquafaba and potato – vegan and fatfree

Following the Medical Medium protocol and searching for a recipe that resembles a French dressing made from mayonaise and mustard? Then this could very well become your new go to!

This French ‘mayonaise’ dressing sauce doesn’t contain any eggs, oils, fatty seeds or nuts. So its not only vegan but also fatfree. The base is made with aquafaba, combined with a few chickpeas and some mashed potatoes. The mustard is also homemade: with only mustard seeds, lemon juice and water. Making this dressing vinegar free as well.

Ingredients

  • Aquafaba – You will use about a ½ cup. This volume is what you usually get from 1 can of chickpeas.
  • Chickpeas – You don’t use the whole can but only ⅜ cup. Save the rest in a container in the fridge.
  • Potatoes – Cooked, mashed and cooled.
  • Lemon juice – You will use ⅛ cup (what you usually get from 1 large lemon)
  • Mustard – For a French ‘mayonaise’ like dressing. Perfect for a vegan egg salad or a potato salad. Look here for the recipe for my homemade vinegar free mustard.
  • Garlic, basil, parsley – If you are not looking for a French dressing, but need a Middle Eastern garlic sauce. Perfect for mushroom kebab.
  • Chili flakes – For a spicy sauce.

What if you can't have eggs, oils or fat? Then you make your own mayonaise-like dressing with chickpeas and aquafaba. Add steamed potato to thicken the sauce. You can even add your own homemade vinegar free mustard from just mustard seeds and lemon juice.

Ingredients
 

  • ½ cup aquafaba = what you usually get from 1 can of chickpeas
  • cup chickpeas canned
  • cup potatoes cooked, mashed and cooled
  • cup lemon juice = what you usually get from 1 large lemon
For French dressing with mustard
For garlic sauce
  • 1 to 2 cloves garlic
  • ½ handful fresh basil
  • ½ handful fresh parsley

Instructions

  • Open a can of chickpeas and drain. Collect the aquafaba.
  • Take ¼ cups of the chickpeas and the aquafaba and put in in a blender. Leave out the remaining ⅛ cup, to be able to adjust the thickness at the end.
  • Add in the mashed potatoes with ¼ cup first and save ⅛. Add the juice of one lemon and blend.
  • If you wish to thicken the sauce a bit add in the ⅛ cup of chickpeas and ⅛ cup of potatoes you saved.
  • Personally I think the thickness is now perfect for a vegan egg salad or a fatfree potato salad. The dressing will thicken a bit on the fridge.
