Medical Medium kale soup with sweet potatoes and dried tomatoes – vegan and fatfree
This hearty kale soup is a comforting, nourishing bowl of goodness. Blending earthy greens with sweet potatoes and savory dried tomatoes. What kind of dried tomatoes
For Medical Medium its important to look for tomatoes with no additives, especially no citric acid. And because this soup is completely fatfree it’s important to use drie tomatoes and not tomatoes in oil. That said, a lot of dried tomatoes contain salt. I personally still eat salt and I like it in this soup. Recommended are these acid and oilfree tomatoes and these (also) saltfree tomatoes.

Ingredients
- 2 cups sweet potato (300 grams)
- 5 cups kale (125 grams)
- 6 to 8 dried tomatoes
- 3 Medjoul dates
- 4 cups MM healing broth
- or 4 cups water
- with 2 tbsp mushroom powder
- 1 cup tomato passata
- ½ tbsp dried oregano
- ½ tbsp dried thyme
- ½ tbsp dried rosemary
Instructions
- Warm up the broth or water with mushroom powder.
- Peel the sweet potatoes and cut in bitesize cubes and add.
- Cut the Medjoul dates and add, together with the dried herbs.
- Let simmer for 20 minutes in total.
- Within those 20 minutes add the kale after 5 minutes. There wash the leaves, cut out the stem and cut in pieces.
- Add the tomatoes after 15 (with about 5 minutes to go).

This is such and easy delicious soup! I didn’t have dried tomatoes and used a puree instead. Yummy!
