Glutenfree & vegan pear muffins with oat flour and dates
Soft and moist muffins without any gluten, eggs, dairy, fat or added sugar. Made with just ripe pears, Medjoul dates, oat flour and millet flour. Some baking powder is optional to create just a bit more fluffiness.

Ingredients
- Pears – Ripe and juicy. How many depends on the size, but you will need a cup peeled, cleaned and diced. I used 1,5 large pears.
- Dates – Best to use soft Medjoul dates. You can measure them without pit, packed not to tightly in a cup. I used 12 big dates, but you might not up to 14.
- Oat flour – One cup. Store bought or grind rolled oats into flour yourself. When I do, I use an electric coffee grinder.
- Millet flour – A quarter cup. Store bought or grind whole grains yourself, again that works really well with a coffee grinder.
- Baking powder – Optional. Leave out on a cleanse or if not available. When used: preferably without corn and aluminum.
Are oats glutenfree?
Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they can be cross contaminated. Always check the labels to see if they are guaranteed glutenfree.

Pear muffins with oat flour and dates

Ingredients
- 1 cup pears
- 1 cup Medjoul dates
- 1 cup gf oat flour
- ¼ cup millet flour
- 2 tsp baking powder optional, leave out on a 369
Instructions
- Preheat the oven to 360F or 180C. Prepare a muffin tin with 4 baking cups.
- De-pit the dates and cut into pieces. Peel and clean the pear(s). Add both to a small kichtenaid and blend.
- Mix the oat and millet flour (and baking powder if used) in a bowl. Add the pear/date paste. Mix.
- Divide the batter into the cups. Put in the oven for 35 minutes.
