Glutenfree & vegan blueberry lemon waffles
A lovely way to make yourself a healthy and warm breakfast on busy mornings. Quick and easy to make with (frozen) wild blueberries and the juice of one lemon. The basis of the recipe is just plain oat flour with water. Storebought flour, or you can grind any kind of rolled oats yourself (old fashioned or cut/quick oats, not steel cut).

If you follow the Medical Medium protocol its important to eat as low fat as possible. Especially in the morning your meals should be fatfree. I used to think it was be impossible to bake waffles without adding any oil. But thanks to other MM followers I learned that it ís possible, if you use a non-stick ceramic waffle iron.
Non-stick ceramic waffle maker
I got the Breville DuraCeramic Waffle Maker for Christmas. It’s a bit expensive so that was great gift! It is ceramic non-stick and it makes two large waffles Belgian waffles. It’s very compact and easy to bake with even without any oil. I bought it in the Netherlands. Unfortunately I couldn’t find it on the American Amazon, but Medical Medium suggests this heart shaped waffle maker (Euro Cuisine WM520).

Ingredients
The main ingredient for these waffles is oat flour. You don’t have to use (plantbased) milk of any kind. Water will do just fine. After all, oat milk is just blended oats with water, so why not just use a little extra oat and skip the whole ‘oat milk make’ step. You don’t need to use eggs either, nor any kind of replacement. The oats will get sticky when combined with the water and have more than enough binding on their own.
- Oat flour – I used ¾ cups for 2 large waffles. Use store bought flour or grind any kind of rolled oats into flour yourself.
- Blueberries – I used frozen wild blueberries.
- Lemon – The juice, and if you like a more lemony taste you can add some zest as well. Be sure to use organic in that case.
- Water – I used ½ cups of liquids in total: add the lemon juice to the cup and then fill up with water.
- Baking powder – Baking powder forms bubbles when it’s warming up. So it will make your waffles fluffier, they will also become just a bit bigger. Just be sure it’s corn and aluminum free.
- Coconut flower sugar – For a sweet and deeper taste. It also makes your waffles crispier. It will turn them a bit darker as well.

Yes, oats are not healing, but they are a top favourite filler. Even ok for the first 3 days of a 369.
No, oats are grains.
Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they can be cross contaminated. Always check the labels to see if they are guaranteed glutenfree. If it doesn’t say so, they are not.
Oatmeal is not a healing food, but on top of the list of filler foods. I still has some fat in them, but no overt fats and for Medical Medium they are considered low fat and ok for breakfast. You can even have them in the first 3 days of 369.

Gluten free & vegan blueberry lemon waffles

Ingredients
- ¾ cups gf oat flour
- ¼ cup wild blueberries
- 1 lemon juice, and if you like zest
- up to ½ cup water
- 2 tsp baking powder (corn + aluminum free)
Optional
- ¼ cup coconut flower sugar
Instructions
- Mix the flour with the baking powder and sugar.¾ cups gf oat flour, 2 tsp baking powder (corn + aluminum free), ¼ cup coconut flower sugar
- Juice the lemon into a half cup. Fill up with water. So you will use half a cup of fluid in total.1 lemon, up to ½ cup water
- Mix in the juice/water with the dry ingredients until it forms a thick batter. Set aside to let it go thicken a bit.
- Warm up your waffle maker.
- Add the blueberries to the batter.¼ cup wild blueberries
- Fill the waffle maker with the batter. Half of the batter will form one large waffle, so you can make two with this recipe.
- Close the lid, you can push it down gently but don't put a lot of pressure on it. There has to be a slight opening to let the steam out and give the batter a change to rise.
- After 7 minutes you can take your waffles out. Use a small wooden spatula to loosen them if necessary.
