Bananas are a great source for healthy carbs. For Medical Medium they are healing foods. And they are perfect to replace eggs, fat and sugar!

Is millet glutenfree?

Yes, millet is a pseudograin, and those are naturally glutenfree.

Ingredients

  • Banana – when mashed you need 2 cups, you will probably 2 medium sized bananas, maybe 3.
  • Millet – you can use flour or you can make your own flour out of whole millet yourself. I use an electric coffee grinder for that. If you do: you can leave the flour just a bit grainy (as I did).
  • Coconut flower sugar
  • Cinnamon
  • Baking powder – not baking soda!

No, millet is a pseudograin.

How come my muffins didn’t rise?

Be sure to use baking powder instead of baking soda. Baking soda needs something sour to achieve bubbles and give rise. Also be sure to mash the bananas thoroughly before mixing with the flour.

Instructions

  • Preheat the oven to 390F or 200C. Prepare 3 cupcake molds or a tin.
  • Mix the flour with the baking powder, sugar and cinnamon.
  • Mash the bananas well (they have to get moisty) and add.
  • Fill three moulds and place in the oven for half an hour.

Notes

I prefer using both paper baking cups and a (ceramic) muffin tin and place the paper cups in the tin. This makes the cups stable when filling and easy to handle.
