This crumble with chestnut and oat flours has the softest and smoothest fruit layer you’ll ever taste. Made from ripe, melt-in-your-mouth pears and cinnamon. Oat flour and cut oats
In this recipe you will use oat flour and cut rolled (quick) oats. Both can be storebought or made yourself by grinding while rolled oats. Do t use steel cut oats and make sure whatever you use: it’s guaranteed glutenfree.
Chestnut flour
Chestnuts are ‘real’ nuts that contain a lot less fat than other nuts, even less than oats. Chestnut flour is a nice and sweet flour that’s easy to work with. In bakings it’s a bit denser that flour grains. It turns brown when heated so it will makes your bakings darker.

- Pear – make sure they are ripe and juicy.
- Oats – oat flour and cut rolled (quick) oats. Both can be storebought or made yourself by grinding rolled oats.
- Chestnut flour
- Coconut flower sugar
- Maple syrup
- Cinnamon

Ingredients
Pear layer
- 3 pears ripe and juicy
- ⅛ cup oat flour (15 grams)
- ⅛ cup chestnut flour (12,5 – 15 grams)
- 2 tablespoons coconut flower sugar
- 2 tablespoons maple syrup
Crumble
- ½ cup oatmeal, cut or quick oats (50 grams)
- ½ cup chestnut flower (50 grams)
- ¼ cup coconut flower sugar (30 grams)
- 4 tablespoons maple syrup
- 2 teaspoons cinnamon
- Celtic sea salt to taste
Instructions
Crumble
- Preheat the oven to 390F or 200C.
- Place all the ingredients for the crumble in a bowl and mix with a fork (or by hand) into crumbles.
Pear layer
- Peel the pears and remove the core. Cut into small pieces.
- Mix the pear pieces with both flours, the sugar and the maple syrup.
- Place the pear mixture in the baking dish.
- Crumble the crumble on top.
- Place in the oven for 30 minutes.
