Glutenfree and vegan cream of mushroom soup
A twist on classic cream of mushroom soup, designed to be both glutenfree and dairyfree. Equally suited for a vegan, paleo or Medical Medium diet! This recipe swaps traditional roux for potato starch (or arrowroot). The base is formed by a velvety cashew cream, crafted from soaked cashews. A delicate blend of paprika, cayenne, and Mediterranean green herbs adds a warming spice and aromatic complexity. This soup can be served as a comforting starter at your Christmas dinner. Or as a hearty main at lunch.
This soup is not suited for everyone on the Medical Medium because cashews contain fat. Check this cream of mushroom soup based on eggplant and potato for a fat-free option.

How to veganise mushroom sooup
A ‘normal’ mushroom soup is made with cooking cream, a roux and chicken stock. The stock adds flavour to the umami of the mushrooms. The roux (made from wheat flour) thickens the soup. I replaced the roux with potato starch, you can replace that with arrowroot. For a deeper, umami packed flavor, I added tomato passata, kombu flakes, and mushroom powder, elevating the earthy notes of the mushrooms to new heights. Optional to add are coconut amino’s and salt.
Ingredients
- Mushrooms – I used chestnut mushrooms. If not available you can use any kind of mushrooms you can get your hands on.
- Cashew nuts – soaked in plenty of water for at least 4 hours. Medical Medium follower? Bare in mind that cashews contain fat.
- Broth – MM healing broth (link in the recipe) or regular vegetable broth.
- Tomato passata – cooked and sieved tomato’s without any additives. No tomato puree, that is thicker. Normally not an ingredient of mushroom soup but provides more depth and colour.
- Starch – I used potato starch but you can substitute for arrowroot.
- Seaweed – I used kombu flakes but you can use any kind of dried seaweed you like, it adds a bit of umami. Normally not an ingredient of mushroom soup but provides more depth and colour.
- Mushroom powder – I used a blend with Chaga, Reishi and Lions Mane. Normally not an ingredient of mushroom soup but provides more depth and colour.
- Black pepper, paprika powder and cayenne or chili pepper – to taste, for some depth and a soft kick.
- Dried Mediterranean herbs – I used oregano, thyme, rosemary and sage.
Optional Ingredients
- Coconut aminos – adds a bit of umami but is fermented. MM official website does use it sometimes, so make your own choice.
- Celtic sea salt – preferably on MM you lower your salt intake to none, but that can be a bridge to far for this soup, especially if you don’t use coconut aminos either. So make your own choices
- Extra virgin olive oil – preferable on MM you lower your fat (and oil) intake, even healthy oils like extra virgin olive oil. By baking in oil the onions do caramelize better and the mushrooms get a bit crispier. So again, make your own choice.
FAQ’s
Yes, I especially designed it to be vegan and Medical Medium. The soup is glutenfree and dairyfree. It can be made fermentfree as well. But this soup is NOT free from fat: cashews are nuts that contain fat. But you can cut down on oil by not baking in olive oil.
Yes, this soup is paleo if you substitute the potato starch for arrowroot. And leave out the other nightshades as well (tomato paste, cayenne and paprika powder) for strict paleo, but those are sometimes eaten in paleo (slight difference of opinion in how the guidelines should be followed). It’s definitely not AIP because of the cashews and the black pepper.

Ingredients
- 4 to 5 cups chestnut mushrooms (450 grams)
- ¾ cup cashew nuts after measuring soaked for at least 4 hours in plenty of water (100 grams)
- 1 cup MM healing broth or vegetable broth
- 1 cup water
- ¼ cup tomato passata
- 1½ tbsp potato starch
- 2 tablespoons kombu flakes
- 2 tablespoons mushroom powder
- 2 teaspoons paprika powder
- ½ to 1 teaspoon cayenne or chili pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried sage
- ¼ teaspoon black pepper
Optional
- 1 tablespoon coconut aminos
- Celtic sea salt to taste
- extra virgin olive oil for baking
For paleo
- 1½ tablespoon arrowroot NO potato starch
- NO cayenne pepper or paprika powder (not strict paleo)
- NO tomato passata just leave out (not strict paleo)
Instructions
Prep
- Soak the cashews in plenty of water for at least 4 hours (this is not added into the time needed).
- Cut the onion into thin half slices. Bake in the non stick pan. For Medical Medium preferably with just some drops of water.
- Add the onions to the soup pan.
- Cut the mushrooms just a little thicker than what you prefer when eating them. They will shrink a bit.
- Bake them in the non-stick pan. For Medical Medium preferably again with just some water.
- In the meantime: drain the cashew nuts. Add them to the cup of your immersion blender with two cups of water.
- Add the kombu, mushroom powder, spices and herbs. Mix several minutes into a creamy sauce.
- Add the sauce to the onions. Add the tomato passata and the broth. Turn on the heat and bring it to a soft boil.
- Put the starch (potato or arrowroot) in a small bowl. Add a few tablespoons of the soup. Mix into a thick paste. Be sure no lumbs remain.
- Add the paste to the soup. Immediately blend with the immersion blender.
- Taste. Add salt if you feel it's necessary. But for Medical Medium try to keep it low.
- Add the mushrooms to the soup. Add the liquid as well or save to use as garnish.
- Pour into two plates. Garnish with some fresh herbs. Drizzle some coconut amino's or the mushroom 'juice' on top.
