Popsicles with pieces of fresh fruits, lime juice and coconut water

Easy to make popsicles with small pieces of fresh fruit filled up with coconut water and lemon juice. Just put in the freezer for 3 hours, and you can enjoy fresh, whole food icecream!

Ingredients

Off course you can make these popsicles with any kind of fruits you like. I just show you a colourful example of what I make.

  • Kiwi – Great for the green colour and the slightly sweet and sour taste.
  • Strawberry – The redder the better, juicy and sweet.
  • Blueberries – Normally I use wild blueberries from the freezer for blending: for example in smoothies and chia pudding. But when I want them for decoration I use whole cultivated blueberries. Here you can use both.
  • Coconut water – Great summer taste! But if you don’t have it available you can just use water instead.
  • Lime juice – Adds to the taste of summer. Just leave out if you don’t have limes.

Molds

Fot these popsicles I used small molds. But you can use any you have at home. Just adjust how much fruit and coconut water you use.

Equipment

  • 6 small popsicle molds

Ingredients
 

  • kiwi
  • ½ cup strawberries (about 60 grams)
  • ½ cup blueberries (about 75 grams)
  • 2 limes
  • up to ½ cup coconut water

Instructions

  • Peel the kiwi and cut into pieces. Crown the strawberries and cut into pieces. When you use cultivated blueberries, pick out the smallest.
  • Divide the kiwi pieces over the molds and press down. Do the same with the strawberries and then the blueberries.
  • Juice the lemons and add coconut water until about half a cup is filled. Full up the molds.
  • Put in the freezer for 3 hours.
