Chocolate muffins with banana and almond flour – glutenfree, paleo and vegan
Easy and quick to make, yet healthy muffins made from banana, pure cocoa, almond flour and almond paste. Specially made for people who don’t eat eggs. No added sugar, just some Bourbon vanilla. Also coconut oil, salt and baking powder. Perfect for a weekday breakfast or lunch on the go.
These muffins are not ok for AIP Paleo or Medical medium because of the cocoa powder. Instead make the ‘no chocolate’ muffins with carob.
Baking powder
If you want a bit more air in your baking, but you don’t use yeast, then baking powder is ideal. Baking powder consists of sodium carbonate and some acid. When those ingredients get warm, they react with each other and forms small air bubbles. This makes your dough rise.
Which baking powder is the best?
The most natural form of baking powder is cream of tartar. That is a byproduct of making wine. However, I no longer use it myself because the cream of tartar I can buy, all use corn starch as an additive. Corn, and certainly processed corn starch, is often a GMO. That is why I use the baking powder which uses tapioca or potato starch instead of corn. Also be sure its aluminium free. This baking powder is adviced by MM.
Is baking powder the same as baking soda?
Baking soda can create the same effect as baking powder, but an extra step is required. Baking soda is pure sodium carbonate to which you have to add acid yourself. Baking soda and baking powder are therefore not a one-to-one replacement. If a recipe contains acid, baking soda will usually be used. If you were to use baking powder, there may be too much acid left behind. Without acid, it is best to use baking powder. If you use baking soda, it will not work or will not work sufficiently and there will be too much salt left behind.
Use an aluminium free baking soda (just for cooking, dont use it as a supplement). This is the baking soda adviced by Medical Medium.

Ingredients
- 1 banana
- 2 el almond flour
- 2 el almond butter
- 2 el raw cocoa powder
- 1 el coconut oil
- 1 tl baking powder (corn + aluminum free)
- 1 Bourbon vanilla powder or extract or paste
- 1 generous pinch Celtic sea salt or to taste
Instructions
- Preheat the oven to 390 F. Prepare the muffin cups.
- Mash the banana.
- Mix all the ingredients together. Go easy on the cocoa. It creates a lot of dust and is not pleasant to get up your nose.
- Spoon the batter into the cups. Put in the oven for 25 minutes.
