No chocolate AIP Paleo banana muffins from chufa tigernuts and carob – glutenfree and vegan
The first time I made these no chocolate muffins, was during my elimination phase on AIP Paleo. In the meantime I reintroduced a lot of foodgroups again. Only to eliminate them again since I started following the Medical Medium protocol. And luckily: I can still enjoy these muffins!
AIP Paleo
AIP is a strict anti-inflammatory paleo diet. In the elimination phase of AIP you cannot eat grains, legumes, nuts, seeds or eggs. And therefore no cocoa powder either. Especially during these first, difficult weeks, you may crave for a healthy treat. That’s why I made a muffin that is as close to a classic chocolate muffin as possible.
Medical Medium
Chufa is not listed as a Medical Medium healing food. Tubers in general are not the best filler foods either, although they aren’t considered no foods. So, these muffins are not ideal for Medical Medium. But if you are bored with other foods I would say it’s ok for once in while.
Carob instead of cocoa
Instead of cocoa I use carob. Although carob is made from the pods of carob trees, it still fits into an AIP diet in moderation. The powder only contains the ground casing and not the pod. So the actual ‘legume’ is not used. The shell is grounded into powder which has same resemblance with cocao. Still: don’t expect to much, since it is not cocao powder and if it were just as good everyone would be eating it.
Tigernut flour or chufa
Tiger nuts, although the name suggests otherwise, aren’t nuts at all. They are small balls on the roots of the chufa plant. So chufa is a tuber.

Ingredients
- 1 banana
- ¼ cup tigernut flour (ground chufa) firmly pressed (30 grams)
- 2½ tbsp carob
- 2 tbsp coconut flower sugar
- 2 tsp baking powder (corn + aluminum free)
- 2 pinches Celtic sea salt
Instructions
- Preheat the oven to 360F or 180C.
- Mash the banana and mix all ingredients together.
- Fill the molds and place in the oven for 30 minutes.
