Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they con be cross contaminated. Always check the labels to see if they are guaranteed glutenfree.
Glyphosate in oats?
A study into breakfast cereals with oatmeal, found glyphosate in Cheerio’s packs, among other things. This can come from a pesticide (Roundup from Monsanto). By now, in Holland everyone is convinced that this is carcinogenic. And it is linked to Parkinson’s. Unfortunately, it has not yet been banned. So for oats it seems especially important to buy organic oatmeal without other additives.

- Banana – when mashed you need 2 cups, you will probably 2 medium sized bananas, maybe 3.
- Oat flour
- Coconut flower sugar
- Cinnamon
- Baking powder – not baking soda!

Be sure to use baking powder instead of baking soda. Baking soda needs something sour to bubble and give rise. Also be sure to mash the bananas thoroughly before mixing with the flour.

Banana muffins with oat flour

Ingredients
- 1 cup bananas = about 2 medium sized bananas
- 1 cup gf oat flour
- 1 tbsp maple syrup
- 2 teaspoons baking powder (corn + aluminum free)
- 1 tsp Bourbon vanilla powder or extract or paste
- 1 tsp cinnamon or pumpkin spice
- Celtic sea salt to taste
Instructions
- Preheat the oven to 360 F or 180C. Prepare 3 cupcake moulds or a tin.
- Mix the flour with the baking powder, cinnamon and vanilla. Add salt to tast, but try to keep as low as possible.
- Mash the bananas and add, together with a tablespoon of maple syrup.
- Fill three moulds and place in the oven for half an hour.

I made this recipe today and it is fantastic. I am gluten free, my daughter celiac, my son in law and myself need to eliminate sugars so this recipe caught my eye.

There is a perfect mild sweetness from the bananas and syrup and the cinnamon pops out to make it the perfect muffin!
I doubled the recipe and made 24 mini muffins. Baked 15 minutes at 350 degrees.
