Apple

Apples are healing foods. And they are perfect to replace eggs, fat and white sugar!

Oatmeal

Oatmeal is not a healing food, but on top of the list of filler foods.

Are oats glutenfree?

Oats are naturally glutenfree. But they are often processed in the same place as wheat or other gluten containing grains. So they con be cross contaminated. Always check the labels to see if they are guaranteed glutenfree.

Glyphosate in oats?

study into breakfast cereals with oatmeal, found glyphosate in Cheerio’s packs, among other things. This can come from a pesticide (Roundup from Monsanto). By now, in Holland everyone is convinced that this is carcinogenic. And it is linked to Parkinson’s. Unfortunately, it has not yet been banned. So for oats it seems especially important to buy organic oatmeal without other additives.

Equipment

Ingredients

Instructions

  • Preheat the oven to 360 F or 180C. Prepare 2 cupcake cups or a tin (or both).
  • Mix the flour with the baking powder, cinnamon and ginger. And salt if you use it.
  • Grate 3/4 apple above the flour (you need the moist as well). The grated apple will fill approximately ½ a cup.
  • Mash a bit if needed with a fork and mix through the flour, together with the maple syrup. It will form a thick batter, more like a paste or wet dough.
  • Dice the remaining apple. Add with the raisins en mix.
  • Spoon the batter into the baking cups. Use a silicon spatula to scrape the bowl if needed. If you like it, sprinkle some extra raisins on top, those will get nice crispy and caramelized.
  • Place in the oven for 35 minutes.

Notes

I usually use both paper baking cups and a tin and place the cups in a tin. That way the cups are stable when filling them and they are easy to handle.
