About ME
Hi, this is ME. Short for Marjolein Eikenboom. Probably not easy to pronounce because it’s Dutch. So, it’s just: ME! I am 52 years old, living with my husband and daughter in a small town near the dunes and beaches of South-Holland in the Netherlands.
Having multiple health and food related issues myself… I know what it’s like to have to skip ingredients. But still we need our food to taste good! And we want to live a happy life. So enjoy my recipes. All are gluten, dairy, egg and soy FREE. You can also choose FREE from grains, legumes, nightshades, nuts, seeds, peanuts, chicken, fish, fat, oils and fermented foods.

In my my healing journey I discovered Medical Medium about a year ago. With great healing results! Before MM came Auto Immune Paleo. First the AIP elimination phase (about 6 months), with great results as well! Followed by a lowcarb paleo period (on and off for 5 years), with not so great results.
My website has mainly Medical Medium recipes now, but you can still also find some AIP recipes. Both MM and AIP stand for clean eating and avoiding ‘trouble foods’ like gluten, dairy, eggs and soy. Medical Medium emphasizes on leafy greens and (healing) carbs from fruits and veggies. While AIP is often practiced with the emphasis on (animal) proteins and healthy fats. But most people on an AIP paleo diet do eat a lot of veggies and fruits.
MM is often practiced vegan and fatfree, but leaving out meat, fish and healthy fats may not be a necessity for everyone. Of course most of us eat honey (which is not purely plantbased). I personally also sparingly eat wild caught, smaller fish and pasture raised, lean beef as well. And sometimes I use oil (mostly coconut but also sesame and EVOO) and fat (nuts, seeds, avocado).
